Turkey Bhuna: Indian The Healthy Way

Both being a lover of Indian (take-aways πŸ˜‰ ), the first thing we decided toΒ try out was something close to a curry; and healthy! So we created…. Turkey Bhuna.

Ingredients

(one portion)

10g cocunut oil
112g Morrisons Eat Smart: Bhuna Sauce
50g Peas
50g Spinach
100g Courgetti
70g Red Pepper
125g Minced Turkey Breast
20g Grated Seriously Strong Cheddar (McLelland Mature Lighter)

Macros:
Calories: 23g
Carbs: 23g
Fat: 9g
Protein: 44g

Instructions

Step 1:
Heat 5g coconut oil in a large frying pan, on a medium heat.

Step 2:
Once the coconut oil has melted, and the pan is warm, add in the peas, spinach and red pepper. Fry for about 3 to 4 minutes or until veg starts to soften.

Step 3:
Increase the heat slightly, and add the turkey mince and bhuna sauce. Fry until turkey is cooked through.

Step 4:
This can be done whilst you are still doing step 3!

Heat the other 5g of coconut oil in a frying pan on a high heat. Then add in the courgetti; fry for about 3 to 4 minutes on a high heat.

Step 5:
Take courgetti off the heat and add to the plate as your base!

Step 6:
Ensure the turkey mince is cooked right through. Take off the heat and layer on top of the courgetti.

Step 7:
Sprinkle the grated cheese on top and VOILA.

N.B. if you are like Ben and need to eat more carbs, we paired this with Mediterranean cous cous. Seemed to go down a treat πŸ™‚
